#470- Pumpkin Pie!



Yummy Yummy Yummy! Totally makes you think about fall time!





Ingredients

  • 1 (8-ounce) package cream cheese, softened
  • 2 cups canned pumpkin, mashed
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 egg plus 2 egg yolks, slightly beaten
  • 1 cup half-and-half
  • 1/4 cup (1/2 stick) melted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger, optional
  • 1 piece pre-made pie dough
  • Whipped cream, for topping

Directions

Preheat the oven to 350 degrees F.
Place 1 piece of pre-made pie dough down into a (9-inch) pie pan and press down along the bottom and all sides. Pinch and crimp the edges together to make a pretty pattern. Put the pie shell back into the freezer for 1 hour to firm up. Fit a piece of aluminum foil to cover the inside of the shell completely. Fill the shell up to the edges with pie weights or dried beans (about 2 pounds) and place it in the oven. Bake for 10 minutes, remove the foil and pie weights and bake for another 10 minutes or until the crust is dried out and beginning to color.
For the filling, in a large mixing bowl, beat the cream cheese with a hand mixer. Add the pumpkin and beat until combined. Add the sugar and salt, and beat until combined. Add the eggs mixed with the yolks, half-and-half, and melted butter, and beat until combined. Finally, add the vanilla, cinnamon, and ginger, if using, and beat until incorporated.
Pour the filling into the warm prepared pie crust and bake for 50 minutes, or until the center is set. Place the pie on a wire rack and cool to room temperature. Cut into slices and top each piece with a generous amount of whipped cream.

That moment of the perfect mix of delight and horror! You spent weeks of endless nights working on a book you love only to find another chapter lying ahead. Then. You finish it! I think that's one of my favorite feelings of all time. Then again.... I hate having to finish it! You know?

#473- A Good Pillow

Ouch... It's sniffles time! Here comes the fever, headaches, and stomach aches. The best part, other than staying home from school all day, Is a nice, cool pillow! Even if it's just after a long day. Pillows make ALL the difference! Special thanks to my mommy!

#475- Hot chocolate

I LOVE HOT CHOCOLATE!!!! Especially on a day like today where it's absolutely freezing and you have an awesome friend with you!!





 

Directions

  1. Combine the cocoa, sugar and pinch of salt in a saucepan. Blend in the boiling water. Bring this mixture to an easy boil while you stir. Simmer and stir for about 2 minutes. Watch that it doesn't scorch. Stir in 3 1/2 cups of milk and heat until very hot, but do not boil! Remove from heat and add vanilla. Divide between 4 mugs. Add the cream to the mugs of cocoa to cool it to drinking temperature.

#476- Popcorn Family Movie/Game Nights

I love my family!!! THEY ARE THE BESTEST THING EVER!!! So nothing gives me more joy than family game and movie nights. It's a time to wind down! Sometimes, usually, people are super duper busy so we dedicate a special night for this. Fridays (or Saturdays if my dad isn't home Friday) And then every Monday we have a thing called Family Home Evening and no matter what happens! Like if my dad is out of town or we are busy we have to sit down and we get to be together and talk for about a half hour!
